Peach Berry preserves

Yesterday I made some peach berry preserves. When ever I see frozen fruit on sale I pick up several bags. So yesterday I decides to make some preserves. I used 2 (14 oz) bags of Birds Eye mixed fruit and 1(12 oz) bag of raspberries. 



The mixed fruit had some pineapple chunks in it that I put through a food processor. I mixed the fruit with 2½ cups of sugar, a splash of lemon juice and let it boil for about a half hour. I did use a packet of liquid pectin at the end to help set it up. I water bathed for 10 minutes and the took the jars out to cool for 12 hours before handling them.



I was able to get 7 small jars and one larger jar (for the refrigerator).
