Egg salad recipes

Since Easter is right around the corner, I thought I would post some egg salad recipes for all the left over hard boiled eggs.

Quick and Easy Egg Salad


Description

This is the fastest recipe you'll ever make. Add some pickle, some hellmann's mayo and some sugar and your egg salad will be ready to go for a quick lunch or a delicious snack.

Ingredients

4 hard boiled eggs
1 pickle, diced
1 teaspoon yellow mustard
1 teaspoon pickle juice
2 teaspoons Hellmann's Real Mayonnaise (or your favorite brand)
1 teaspoon sugar
Salt and pepper to taste

Instructions

1. Mash cooled eggs with a fork.
2. Add in other ingredients.
3. Mix well.
4. Keep chilled.


My Favorite Egg Salad
Description

Pickle relish and pickles are sure to give your egg salad a great taste. This is my favorite recipe.
Ingredients

4 hard boiled eggs
2 tablespoons mayonnaise
1 1/2 teaspoons prepared yellow mustard
2 teaspoons rice vinegar, cider vinegar or leftover pickle juice
1 1/2 teaspoons granulated sugar
1/4 teaspoon salt
1 stalk celery, minced
2 teaspoons pickle relish
Paprika

Instructions

1. Hard-boil eggs at least 15 minutes. (Tip-put 1 tablespoon ot oil in boiling water. Helps to peel eggs easier)

2. Run under cold water and peel.

3. Place eggs in a bowl and smash with a fork until chopped up.

4. Add all ingredients, except paprika, including salt to taste.

5. Mix well, chill for at least 5 minutes and spoon on pieces of bread, toast, lettuce leaves, combination salad or crackers.

6. Sprinkle with paprika.
